If I remember right, I could do it before using Quicktime 7 Pro by opening the first file and placing the cursur to the end of the movie, then dragging the second movie into the window. All I had to do after was save the video.

I can't figure out how to do this with the new Quicktime. Any help?

You can't. Apple has included QT7 on the Snow Leopard disk so you can reinstall QT7Pro if it is no longer on your system. It still might be on your hard drive under Macintosh HD -> Applications -> Utilities . That is where my QT7Pro is located. Quicktime X is basically an updated version of Quicktime 7 but there is no pro version out yet.
