found this article this a.m.

AppleInsider | Inside Mac OS X Snow Leopard: 64-bits

it describes the capabilites of SL in simpler terms for those who are still a little confused about what 64 bit means.

quick qoute

"Running the 64-bit kernel or not, the singular version of Snow Leopard always runs 64-bit apps when running on 64-bit hardware; in contrast, no 32-bit editions of Windows can run 64-bit apps, even on 64-bit capable hardware."

Thanks for that! :)
What I got out of it is that the current 32 default mode is sufficient for seeing improved performance in Apple's 64-bit apps. I should basically wait until more and more apps/drivers are released in 64 bit before I bother starting up my MBP in 64 bit.
Apple is just getting ahead of the game and making us ready for the next wave.

...and even if you have a 64-bit kernal, you can't take full advantage of 64-bit applications if your EFI is only 32-bit. But, you can still run Snow Leopard.

I guess the hardware is behind the software a little "bit".

Not that I understand all that geek speak, but that's my impression.
