Is it normal for the fan of the 13" aluminum macbook pro to reach 5000rpm (according to istat) when using graphic intensive applications? (i.e gaming)

Yes, very normal. If, for whatever reason, the system gets too hot even running the fans at full, it will shut down itself. There is no risk.
