After I select font size and alignment for my entries, how can I make the selections my default for all entries on that spreadsheet?

Well, I'm using OO3.00 (don't know if it is the most current version). Under "Format", select "Styles and Formatting" and it will give you a box with a list of styles/formats. The top one should be Default and you just right-click on it to Modify the Default settings. Go through the tabs and set it up the way you want.
