how do you go about doing this on an iMac?

By dual monitors do you mean add an external monitor or do you mean two monitors in addition to the one that's part of the iMac?

adding one monitor to the Imac itself....not triple monitors....what kind of video out cable is there?

The cable style will depend on which iMac the OP has . . . remember that there are G3, G4, G5 and then intel iMacs, each using a different VGA/DVI cable connector.
