I was wondering if it was possible to replace the hard drive of the new mac mini. Second, is it also possible to add a second internal SATA hard drive to the mini.

I don't think there is enough physical space in a Mac Mini for two hard drives, but it is possible to replace the one that's in there. You'll have to do a clean install of the operating system on the new hard drive or get an enclosure and clone the old system over (recommended, saves a lot of time).
