Is there a program that will export audio from an mp4 file into an mp3 file?
It has to be able to do more than one file at a time, or que a large list of files so I can leave it running in the background.

I don't know of any non-shareware GUI software, but you can install faad (AAC decoder) and lame (MP3 encoder) with Macports (requires XCode) and find a bash script, which would allow you to batch convert them from Terminal.

I suppose just using iTunes would be too easy? ;)

In that case how about Max?

It'll convert files in any direction you have the codecs for. You can just drag and drop a batch of them to the conversion window and it will chew through them exporting them using the codec and settings of your choice.
