Question about avi files

I ripped a my copy of Tropic Thunder to my computer as an avi file. I want to edit some of the movie (language) and then re-burn it to a dvd. What programs can I use to edit the file without losing the quality. After editing the file, should I convert it to a different format to prevent image quality lose. I'm new to all this video file stuff.

Also, I'm on a new MacBook Pro.
