So I just bought on of the new aluminum unibody MacBooks and I need to connect it to a TV with S Video. I have been unable to find a Mini Display Port to S Video adapter. What would be my next best option? Apple has a Mini Display to VGA and a VGA to S Video adapter so would using them both together work? Also, what is more common on non-HD TV's VGA or DVI? Thanks!

I would go for mini display port --> vga --> S-video
I don't know when there's new connectors coming, but I heard rumors of all kinds of converters. Like MDP-->HDMI and MDP-->S-Video
Just don't know when.

VGA is the more common connector on most plasma screens.
