So are these the same HDDVDs that were phased out a year or so ago or are they Mac only, playing only on Macs?

They are the same spec. If I recall properly, you can also create a disc image and burn it to regular DVD.

Blu-Ray is not yet supported from DVD Studio Pro, although you could do all of your HD editing and I believe the encoding via FCP (not sure about FCE). Mac users are using Toast and the Adobe video editing suite for Blu-Ray.
