Leopard: Individual Folder Settings?

Is there a way to have individual folder settings for folder organization? In Tiger it was possible, but I can't seem to find how to do it.

For example, I would like to organize my Documents by Kind and my Applications folder by Name.

just right click inside the folder and click 'show view options' then click the drop down arrow were it says 'arrange by'.

The problem is that it applies it to all folders and not the individual folder.
