Why don't you want to use disk utility?

Way... way too many specs to list.
hdiutil makehybrid -o ~/image.iso /path/to/directory -iso -joliet

This will make an iso called image.iso in your home directory (where /path/to/directory is the path to the files you want to make an iso from)

if you're making it from a disk you can use dd.

dd if=/dev/disk1 of=file.iso bs=2048

where the disk is /dev/disk1 (you can find this out by doing drutil status)
