I'm trying to get Preview only to open these images. I know you can right-click and set it to "Always Open with Preview," however, this setting only applies to that one image you're right-clicking. I want Preview to ALWAYS open ALL images. How can I do this?

you have to do this for each image format separately. you if you click on the file, then "get info" (cmd+i or file->get info) and then change the always open with to preview, you then click "change all" right below it, and it will make that the default for all of the file format you did this with. (all .jpgs, or .gifs... etc).
though preview should already be the default app for all image files.
