I saw this girl taking notes with Microsoft Word with the feature that makes it look like a notebook in my bioethics class. I also saw that her macbook pro was recording the lecture too!!! with the computer!

You can do this with iMovie using your built in iSight camera, so should work on your Macbook too.:)

Has anyone tried using the iMac to record calls on a nearby speakerphone?

She bought Microsoft Word. 2004 and 2008 both have this feature.

Are you allowed to record without their permission?
No, but if you're paying to take the class, the professor is obligated to allow you to record it, as long as you don't try to sell the recording later or something. College students have been doing this for years with cassette players (and before that, the ones who could write quickly did it in a simpler fashion.)

From the view menu go to notebook layout. You can then click on the audio notes button from the toolbar and click on then click on the record button…

Voice recognition on a Mac isn't always that great when you're using the built in mic. I suggest that you get a cheap headset or something of that sort.

Are you allowed to record without their permission?

Definitely not in BC, and probably not in Canada. It is illegal to record someone without their knowledge and consent. That's why they have those recordings that say "Your call may be recorded for quality assurance and training purposes". If you want to record the lecture, you have to ask your instructor. If they say no, you'll have to find other means of filling in what you miss.
