Way to choose where itunes saves music?

Is there a way that i can choose where itunes saves the music i import from CDs? I'm in the process of backing up my music, and i don't want to have to go searching for each song when the finish, i want each album to go where i want them to. Some of these Cds are mixed, so there are a variety of artists on each CD. So is there a way?

iTunes > Prefs > Advanced > General and Importing
Fiddle about with those settings.
