Well , I got a request from my room mate who is a Club DJ. He just got a request from a new club to bring a video team and have a 1 or 2 cam system that would transmit wirelessly from the camera to a laptop (mac book Pro) or directly to a projector, is this do able?

yes but it'd be very expensive. You can get all the transmitters and such from B&H. There are a lot of options for exactly what you want to do.
