First of all is there a way to tell? I'm assuming there would be some sort of a serial/production number so you could tell MBPs with a number in the range of xx-yy were sold in the early 2008, range yy-zz were sold in mid 2008, and so on.

I'm just curious if there is a way of determining the shelf age of a new product.

Also try Coconut Identity Card. It gives you a general idea of when your Mac was built, and also where it was assembled.
