On my PC I had most of my music and all of my movies on my external HD and I didn't need it to be on my pc's HD. I put all of my music and movies into iTunes as i would on my pc (file-add to library-chose folder) and it put all of my music and movies onto my Mac's HD. Is there a way to have iTunes access my media from my external and not have it on my internal?

That's exactly what I did -- all my itunes tracks are on my external (saves 30+ gigs on my hard drive). All you need to do is go to Preferences --> Advanced. It should default to general, then click CHANGE... , and choose the folder to put (and retrieve) songs and movies in (from).
