is there a non-jailbreak pdf viewer app on the store? I have been searching but haven't found anything.

It is built in. Are you not able to view them?

I never realized that I could add them to the device. Is the process through Itunes?

Oh, to store them? No, you can't do that. For some I email them to myself and others I make a web app after posting online. Those are the only ways I know of.
