I drop Chrome in the trash and emptied it but when I reinstalled Chrome all the preferences and theme was still there. How can I uninstall everything so that I can start again.

Chrome -> Preferences -> Reset to Defaults. Uninstall

Reinstall again.

Because you never used the uninstaller.

Rule to remove applications is (1) Uninstaller (2) AppTrap or similar (3) Place in trash and go through all preferences. (1) is much, much easier.

I found a quick fix for getting rid of your bookmarks. Bookmarks > Bookmark Manager > click on the top bookmark hold shift and click on the bottom bookmark. Then press delete.

It's Google. They know everything about you.

Chrome doesn't have an uninstaller. ;)

Bookmarks are in ~/Library/Application Support/Google/Chrome/Default. The Default folder, IIRC, is the default profile.
