Any tablet should work. It just acts as a mouse, and the buttons on the tablet act as hot keys, you can set them to do whatever. I'd recommend getting a Wacom tablet, they are rated the best.

I agree with Stretch. Wacom tablets are amazing.
I've got a Wacom Bamboo over here and I love it. The small size kind-of annoys me but it's a brilliant piece of equipment.
And yes, most if not all tablets will work with Photoshop Cs3 as well as Illustrator etc'.
