How do I stop OS X Lion from automatically opening things?

I just upgraded to OS X Lion, and now, when I launch an application, the document windows that were open the last time I used the application are automatically opened. This seems to be a change from Snow Leopard. Is there a way to turn this off? I looked at System Preferences> Users and Groups, but that only lets me say which applications to open, not whether previous documents should be automatically opened.

open system preferences, go to general and un-check the box that says restore windows when quitting and re-opening apps

Plus, make sure you actually quit all apps before shutting down. Not just closing the apps.
