Hiding Programs with Keystroke

I know on windows there are programs to hide all current program and to start specific ones. These are used especially in college classes (ie. to hide AIM, Firefox, and open Word simultaneously so the teacher cant see what you are doing) Are there any programs like that for Mac, and what one works the best?
