Printing Preferences

I am a recent "switcher" and I am struggling to figure out how to set my printer to print in Draft and Black & White as the default, which I can then change to high quality when required. The printer is an HP photosmart 7760 and it worked fine in Windows....
Can anyone out there point me in the right direction. Thanks.
