How do I force quit on the keyboard?

iMac 17" 1.83 GHz Intel Core 2 Duo
My iMac keeps freezing up if I have more than 2 programs open at once. It will only let me look at the dock but won't pull up anything I click on including the apple menu. How do I force quit using the keyboard? I've had no choice but to shut it down improperly. Please help.

novicew is right, but it is sort of band aide for a broken leg. You should try to figure out why it is freezing. Forced quits and shut downs can make problems worse!
