Mail.app and Gmail IMAP -question

If Gmail archives *everything* (received, sent, deleted) in the "All Mail" folder, doesn't that make the Trash folder obsolete?

I can permanently delete messages in Mail.app and then i don't see them in the Gmail or Mail.app Trash, but i can always find them again in the All Mail folder.

Is this correct? Or what would be bad about working this way?

As far as I understand stuff, Gmail DOES keep your permanently deleted mail, as stated in their rights, but for itself [which is why I don't use Gmail for my important mail]. I don't think you still have access to it after deleting it permanently.

If you tried and you can really find them in the All Mail folder, I don't know.
