I have a Mac that was returned to me for us to put back in inventory. As I am reviewing files to backup prior to reissuing, I noticed it was factory resetted. How can I go back and see if any files or folders were removed? Or how can I tell what software did the machine have before it was reset? Any help is appreciated.

If it was reset to factory settings, then some files and folders will have been removed.... no doubt.
To see what apps were on there before it was reset, you can't ... unless you have a previous backup of that machine.
You can spend a few thousand dollars ( or the equivalent thereof ) and ask a specialist company to " try " ( and I really mean " try " ) to recover some lost data.

Probably not the answer you were looking for, but I just wanted to manage your expectations.

Cheers ... McBie

I'm assuming this machine is for resale or reuse so I would have thought resetting it to factory settings would have been the logical thing to do. it is the easiest (best) way of returning the machine to its original condition and ensuring all added files, apps and in particular associations with an iTunes account were removed. Have I misunderstood something? Why would you want to see what files were on it before it's return? I would have thought a factory reset and clean instal of the OS would be standard procedure prior to reissue.
