In Finder, in the toolbar, by the gear click the black arrow pointing down, click "View Options", then click "Show icon preview".

It also depends on the type of document and the format it has been saved in. Sometimes a thumbnail of the doc is created and sometimes a default, generic thumbnail is all that you can view.

though Ive come to find that images on my desktop, though it says show icon preview, wont show. like they said, it also depends on the format, an easy solution is to use column view(command+3), and at the stage where you click the doc itself, it shows a bigger preview of the file, even most illustrator and photoshop files if you have them.heres a sample.
