Boot to safe mode?

I have two questions both relating to booting up. The first is that I have been reading topics about booting to safe mode. Now I know how it's done in Windows but how is it done in Mac?
The second question is about booting from a backup drive. I have started using Carbon Copy Cloner to make a complete backup of my hard drive. If I wanted to boot from this drive (after making the drive bootable of course) how do I do it?

This document covers all of the startup key combinations for Intel based Macs.

To start-up from the cloned drive, simply plug it in, power it on, and hold the Option key down at startup. Then, choose the external as a boot device and restore your backup to the internal drive.
