I'm going to attempt to upgrade my mom's iBook with iLife 03 to 05. Anything I should know, such as, do I just delete her 03 apps prior to installing 05?

I have not gone from version 4 to 5 yet. You should be able to install right on top of the old version. The one suggestion I will make is, the at the read me or installion note. There is a section near the bottom, that tell you that you must open the application in a certain order are the installation. I believe this is needed to finish the install.
