Your Mac's Specs
Mac Mini (Late 2014) 2.6GHz Intel Core i5 Memory: 8GB 1600MHz DDR3
How many? (Rather, how much, in MB?)

I haven't done Windows to Mac, but I'm thinking USB flash drive.
Can anyone confirm that the formatting of the flash drive will not be an issue?

Have a look at these directions. Expanding the links there will show directions for using Migration Assistant or moving the flies manually. I suggest using Migration Assistant.

Shout if you encounter any problems.

A 32 GB USB flash drive (FAT) worked for me - transferred about 20 GB to my new (rMBP from an old Dell laptop - Docs/Music/Photos folders - took a while since the flash drive was USB 2.0; BUT, then did a BU to a new LaCie SSD USB 3.0 of the same files (less than 2 minutes!) - Dave :)
