I recently purchased a Mini DVI to HDMI cable to connect my iMac to a 32" Samsung TV. My main purpose was for the editing of video's using iMovie. The connection worked fine and I was able to view the clip(s) I was working with on the TV. I was also able to change anything I wanted in the clip using iMovie. The only problem was that every other application (other than iMovie - example mail, address book, excel, etc.) that I attempted to use was now 1/2 to 1/4 of its normal size. Also, there wasn't anything I could do about it using "system preferences". Once I disconnected the HDMI cable, everything came back to normal. Is that normal for the mini DVI application?

It's not the mini DVI adapter to HDMI that's causing it. It's likely because the resolution for the Samsung maybe set too high causing everything to appear smaller. Or, it's because the native resolution of the Samsung is much higher than that of your iMac.

You need to open System Preferences, Displays, and set the Samsung to its native resolution. Check the Samsung user manual to see what it's supposed to be. We also have a Sticky thread in our "Other Hardware" forum which discusses this. The Sticky Thread can be found at the top of the forum.
