How sync touch 2 mac w/o disturbing app order?

I spent a lot of time sorting my apps and typing up notes and such, all of which I don't wish to loose when syncing to my new macbook pro. #1 if I sync, would I loose all my notes? #2 is there a way to keep my apps and folders together and in place and have my iTunes adapt to my touch, not vise-versa? Please and thank ya
