2.16GHz - 2GB vs. 3GB RAM

I'm unclear as to whether an upgrade to 3GB of RAM on my 2.16GHz (Late 2006) MBP is a performance upgrade.

Since the RAM is DDR2 or whatever, is it better to stick with two 1GB sticks or go ahead with the 1024+2048?

15" Macbook Pro (2010) 2.4Ghz, 4GB RAM
because the ram runs dual channel it is better to stick to matched pairs...i really want to change my 1024MB+512MB for 1024MB x2 in my mbp

The guys at Other World Computing suggest that despite the theoretical advantage of matched pairs, having that third GB creates more "real" performance gains.
