multiple cats on a macbook

could one make 3 partitions on a HDD of a Macbook and on each of those partitions install a different cat? For example,

1st partition = Panther
2nd partition = Tiger
3rd partition = Leopard

Yes, but you wouldn't have much space left!

let's pretend that space is not an issue

how would one proceed with this project? which cat should one install first or is the order irrelevant? how does one choose which system to boot?

You won't be able to install Panther. The earliest you can install is Tiger, whatever version that came on your restore discs.
