Switching from dual core to single core?

I understand that on Windows this is a very easy thing to do. Of course, on Mac, I can't find anything in my system that will allow me to switch from dual core to single core, or to manage the cores at all. On Windows it allows you to specify how many cores run a single program, even. I searched all over the place online, and I haven't found a single piece of information on this. Frankly it's getting a little annoying. Does anyone have any idea about this?

Why on earth would you have any interest in doing this? Seriously, I'm asking.

I've heard of people who enjoy micro-managing their files (never understood that myself) but micromanaging the PROCESSOR? That's a new one on me.
