Lion Desktops Jumping Around

I am using Lion now, and am bummed it no longer offers Spaces. I've found the multiple "desktops" which acts kind of similarly, but am frustrated by apps jumping around! I like to put my Mail, iCal, and iTunes in the last three desktops (so I can ignore them for the most part), and then move between 2 or 3 active desktops with Word and Firefox for example, whatever I am actually working on. The problem is, if I click on iTunes from my dock, it moves that 'desktop' to be right next to the one I'm working on. Now I have to scroll through iTunes to get between Word and Firefox. Is there any way to prevent this??

Yes, the new "spaces" is a small pain to setup but it's possible.

This I think you already have right:
Open the application you want and then move it to the desktop you want it to stay in. Then right-click it's dock icon and under "Options" choose "Assign to this desktop". Now it should stay there for good.

This is whats tripping you up:
In the Mission control system preferences, uncheck "Automatically rearrange spaces based on most recent use"
