There is a little plus sign in the bottom left corner when you bring up the widgets. Click it and then just click the little "x" that appears in the top left corner of the widget you want to get rid of.

are you talking quiting them or deleting them? If you want to delete them I suggest you use spotlight.. search widget then just drag them from spotlight into your trash and empty your trash.. that should remove them from the dashboard

    Specs:
    12" Apple PowerBook G4 (1.5GHz)
If you open the Dashboard and click on the +, the very first widget (called "Widgets") shows a list of all the other widgets. Click the red (-) icon to move a widget to the trash.

It only works for non-Apple widgets (those you've downloaded yourself.) To remove the Apple built-in widgets, you have to go hunting through the Library folders.
