How to insert page number and number of pages in Pages. Using MacBookPro and Pages v 5.2.2.

In Pages 5.2.2, move your cursor down to the bottom of the page where the Footer would normally go. Hold the cursor there for a moment and a dialog will appear regarding page numbers. Insert a number that you wish to start with. There are also other options you can explore using the same method. You need to experiment a bit.

For example: 1 of 1, 1 of 3, or just 1
