I am having to abandon Gmail for another email client, and I am trying Apple Mail. It pulled in the messages from my In box very nicely. How do I import the Gmail folders with the rest of my messages, and my Gmail contacts? I went to File > Import Mailboxes, but it did not give Gmail as an option.

That's because GMail is not a mail program, it's an internet mail provider. The Google GMail web page has some very good instructions on how to setup Mac Mail with GMail.
