Well mp3 and m4a are music files so no, you can't convert a movie into an audio file.

Is that what you were wanting to do?

in quicktime pro, you can extract an audio track and convert it as its own file, there a few ways to do it actually, or you can use an app like mpegstreamclip that will separate the audio from video.
