Adobe Acrobat Professional and Preview?

I can open pdf files with Preview which is great, but I used to use Adobe Acrobat on my old windows pc.

What does Adobe Acrobat Professional have that Preivew doesn't? I don't want to end up having two programs that do the same thing.

Preview will display PDF files and other images. The latest version, included in Leopard only, allows you to make some minor changes, like rearranging the order of pages in a PDF.

Adobe Reader, which is a free download, displays PDF files, but does not allow you to edit them. It's also slower than Preview, and is generally badly behaved. I would only recommend it on Windows, since Preview is not available for Windows.

Adobe Acrobat Professional is a $380 program that adds the ability to edit the text in a PDF, create customized forms for people to type into.

Is there a good place on the web to learn how to use adobe acrobat pro 9? A friend gave me it and i have no clue how to use it or what it is for.
