Back in my dark days (when I used Windows), I would have the ability to have a shortcut on my desktop that pointed to a new mail composition window using the "mailto:" tag. Can I do this on my Mac?

You can drag any mailto: link from Safari to your desktop. Like this one, for example.

Alternatively, just type
Code:
mailto:email@domain.net
into any text-editing program*, select it, and drag that to your desktop.
