From that list I found Stuffit, Flip4Mac, Acquisition, and Candybar/Pixadex the most useful/fun to play with my first week. I don't use Adium because iChat is fine for AIM but most people swear by it if you use MSN or other IM apps.

Also, a lot of people here use Onyx for maintenance... I haven't gotten a chance to play with that yet.

You should check out www.freemacware.com lots of great stuff, also includes most of the aforementioned programs.
