When I try to open openoffice it asks me where my preferred xWindow server is. What exactly does this mean? thanks for the help/time!

Open Office is an open source office project. You need an X windowing software to use it. Apple has one, called X11. Download that.

OpenOffice.org requires that you have X11 installed. You can obtain X11 from Apple's website here:

http://www.apple.com/macosx/features/x11/download/

There is some customization that needs to take place. You can find some helpful information about integrating OOo into OS X here:
