Macbook - Making the switch

So I have decided to make the switch. I'm getting a black macbook, 1gb ram, 80 gb hd. The thing is that I'm in Iraq until January and I want it NOW! I found macconnection.com through the apple website and they ship here. I have 2 questions.

1. Can applecare be purchased after i get home or must it be purchased with the macbook?

2. Is transfering files from a pc to mac simple enough that I can do it? Can I use my external hard drive to do it? I have my gateway laptop with me. The only thing I really want to transfer is music, pics, and videos.

Mac Specs: Aluminium Macbook 2.4 Ghz 4GB RAM, SSD 24" Samsung Display, iPhone 4, iPad 2

1) Applecare can be purchased any time within the original warranty, so within 1 year.
