How do I minimize an application like a game that takes up the whole screen, is there a series of keystrokes or something.

Only some games will let you. Try to press Command + M during game play, that will either turn the game to a window, minimise the game, or do nothing. If it turns the game into a window then just press the orange circle to minimise it.

If none of that works try Command + W and the other steps from above.
