Using TeamViewer I have my iPad connected to my MacPro. In settings I have chosen to use touch on the iPad to move around on the screen. My problem is that moving two fingers apart in order to zoom doesn't work. making it difficult to be accurate. Please let me know if you know how to resolve this problem

It sounds like either:

a. Teamviewer doesn't support zoom, or
b. You can't use zoom while using touch to navigate the screen.

I do not use Teamviewer so I can't say for sure, but some programs simply don't support zoom (for example, FaceTime).
