Is there a quick and easy way to close all open apps on an iPhone 4S and/or an iPad 2?

Or, if you don't choose to follow Chas' excellent advice, you could double tap (heh) the home button, which will bring up recent apps. Hold one of them, and a little "No Entry" sign will appear, click that and it will close the app.

That doesn't actually close anything, since they are already closed.

Interesting read, but two questions not covered by that author:
1. What about users who don't use the home button to switch apps and instead use screen gestures? I've been doing that to extend the life of the hardware button. Does othe gesture method invoke the same memory management states as the home button?
2. What about apps that are not well written and continue to run in background? How do I know if I have one of those running?

Longtime Windows, then onto slippery slope with iPod/iTunes in 2006, then Apple TV, iPad, iMac and finally iPhone in 2011.

Interesting, maybe this guy should tell Apple this so they can stop printing it in their iPhone 4S user guide.

I'm not contesting the difference between "Running apps" and "Recently used apps", I'm merely pointing out that according to Apple, doing what I described does quit an app, which is what the OP wanted to achieve.

Apple's advice does not contradict what I said (or what Fraser said) at all. I (and he) said the app was closed, not quit. IOW, it goes into an inactive state.

As I said in my original post, powering down the device quits all apps. That you can manually force a misbehaving app to quit using the multitasking bar doesn't contradict anything.
