So basically, I erased the information from my Macintosh HD through disk utility but I just wanted to make sure that ALL my files are not permanently erased. When erasing I selected the option 'Don't erase data', So is this a possibility that every single file I had can be recovered? Also, can I use disk utility to recover the files or is there another software I need to use?

So let me get this straight ....
You deliberately erased files , but you wanted to make sure they were not erased. I think I am getting old ... You need backups man, taken prior to the event of course.
